Moujadara with Burghul

Serves 4

  • 1 cup lentils rinsed
  • 3/4 cup burghul
  • 3 - 3 1/2 cup water
  • 3 onions chopped
  • 1/4 tsp mixed spices
  • 1/2 cup olive oil
  • Salt & pepper

** Important **

The mixed spices used here are the traditional '7 spices' you can buy off the shelf.

Put the lentils and water in a deep pan, boil then lower the heat and simmer for 20 minutes. Meanwhile, heat oil in a seperate pan and fry the onions till dark brown. Add fried onions and oil to the lentils, stir, add spices, salt and pepper. Simmer for 5 minutes then add the burghul, cover and simmer for 40 minutes. Take off the heat and leave to stand for 15 minutes. Serve hot or cold with salad or yogurt.
