Put the chillies , garlic ,coriander , lemon
juice , basil , oregano , sugar , wine or water , salt & pepper
in a shallow dish and mix very well. Add the chicken pieces, stir,
cover and leave to marinate for 1 hour or overnight in the fridge.
Heat the oil in a pan or wok, drain the chicken ( reserve the
marinade ) and fry in the oil till it's browned. Remove from the
pan.Using the same oil, fry the sliced onions tiil browned, remove
to one side, add the peppers to the same pan & add a little
bit of oil if necessary then fry for few minutes. Return the chicken,
the onions and the reserved marinade to the pan with the peppers.
Stir and cook on low heat for about 5 minutes, stirring occasionally,
or until the chicken is well cooked. Adjust seasoning to taste.
Serve with tortillas, guacamole
and soured ceam.
