Serves 3 - 4

  • 500g skinless and boneless chicken cut into cubes
  • 1 jar 225g crunchy peanut butter
  • 1 onion chopped
  • 3 cloves of garlic crushed
  • 1 - 2 tsp. chilli powder
  • 1tbs curry powder
  • 1 tbs. tomato paste 1tbs lemon juice
  • 1/2 tsp. mixed spices
  • 1 tbs. flour
  • 2 tbs. cooking oil
  • 1.5 pints of water
  • 1 kg yam peeled and cut into pieces then boiled in salted water
  • Salt and pepper

The mixed spices used here are the traditional '7 spices' you can buy off the shelf.

Heat oil in a deep pan, fry the onion till soft and add the garlic, then curry powder, chilli, and mixed spices. Stir for one minute then add the chicken pieces. Continue frying for a few more minutes, add the flour, stir, add water, the peanut butter, lemon juice and tomato paste. Let it boil then lower the heat, cover and simmer for 20 - 30 minutes or till the chicken is well cooked and the sauce thickened. Serve with mashed yam.(To mash the yam, use a potato masher or food processor.)
